18 months!

Wow, how time has flown! I can't believe Sutton is 18 months, aka 1 1/2 years old, already! I know some of you read my blog for the recipes, but I know some of you with your own little ones appreciate me updating milestones of Sutton's. So here goes...

Yes, we had shots again at the 18 month appointment, Hep A and a booster of pneumococcal something or the other (helpful, I know!). They will ask you how they are progressing with words. I tried to make a list of things Sutton was saying. At least the things I could understand anyway! Our favorite is "be da be". We believe this to mean, "read to me", since she hands us a book when she says it. :) She has a list of about 25 words at this point. Now, remember this includes simple words like, WEE, said when she is on the swings at the park. In case you are wondering, we are weighing in at 27.3 lbs (80th percentile) and 33 inches tall (85th percentile).

Food is still one of Sutton's favorite things. She loves most fruit and we are working on veggies. It will be nice when she can start trying raw veggies. She does love cauliflower with cheese sauce! We buy the Green Giant Just for Ones. She can eat a whole one in a sitting. These are good for the times when they just can't eat what mommy and daddy are eating for dinner.

As far as things she likes to do, she loves to be outside! She loves swinging and exploring all of the playground equipment. Her most favorite place to visit is the Deanna Rose Farmstead. She loves feeding the goats, so much so that she gets upset when we have to leave them! I'm pretty sure she is going to enjoy swimming, too. I took her back to the indoor pool at the Matt Ross Community Center yesterday after a long hiatus. She was pretty scared at first, but I kept working with her and when it was time to leave there was a mini-meltdown!

I guess that is what is new in our world. Napping remains a mystery. Most days we are down to one nap in the late morning/early afternoon. Sometimes we still get two, but rarely. No matter how the day goes, one thing I always know. I love her more than anything or anyone (Sorry, Sean...it's true!).  I would throw myself in front of a bus for her!

Salsa Chicken Bake

Here is a recipe I just found as I was cleaning off my bookshelf. I think I must have copied it at a Weight Watchers meeting because I have the servings and points written down on it! I love when I find these lost treasures. :) Enjoy!

Salsa Chicken Bake (Serves 6, 5 WW points each)

6 Boneless Skinless Chicken Breasts
1 cup mild salsa
1 Tbls. minced garlic
1 (10 oz) can diced tomatoes with green chilis (ex. Rotel)
11 oz. frozen, fresh or canned corn
1 cup reduced fat Monterey Jack cheese
1/2 cup chopped green onions

Directions

Preheat oven to 350 degrees. Place chicken in sprayed casserole dish. Sprinkle with salt and pepper. Add the salsa, garlic, tomatoes, green onions and corn, mixing well. Bake, covered for 1 hour or until chicken is tender. Uncover and sprinkle with cheese. Continue baking for 5 minutes or until the cheese is melted.
